Ireland has done something to my taste buds. All I want to eat is peppers, onions, sweet potatoes, tomatoes, and all other vegetables galore. Seem hard to believe or like I'm exaggerating? I can honestly say I'm not. Not that I'd choose these treats over New York Style Cheesecake, but I've started adding vegetables to basically every dinner I eat. Way to go Ireland - you have done the impossible!
I love walking through the English Market on Friday afternoon, the new end-of-week routine, and delicately deciding which vegetables I want to test out that week. Now that I'm shopping more regularly it's nice to pick and choose different foods each week. Right now in my fridge I've got garlic and onions (I'm sure I'll be doing lots o' kissing after eating those), tomatoes, baby spinach, sweet potatoes, and a red pepper. This is truly unlike me. I've always been a pretty adventurous eater and I'll try mostly anything put in front of me, but voluntarily going through the trouble of cooking up vegetables for myself? Certainly a new development. Plus, now I don't simply rely on Tesco for their pre-packaged stir fry because I can make my own!
I have become a big fan of the kitchen. This past week some of my favorite creations were homemade stir fry, crepes with Kristin and Mary, mozzarella/tomato/baby spinach sandwich (YUM), and sweet potatoes. Nothing too crazy, but just crazy enough that I feel like I'm making real meals. Now all I need is to score a sweet Senior apartment next year so I can share these new skills with my friends. Potluck dinner, anyone?

You didn't get the kitchen/cooking gene from me, but I'm glad you got it! It obviously skipped a generation, so I'll be looking forward to all of your tips when you are back in the States.

Ali, I love veggies!! I think it is something that comes with maturity!! Giggle!! Can you get "good" tomatoes at this time of year in Ireland?
